Easy & Delicious: Fritattas!

Here is the secret to the perfect easy Fritatta!  We eat these ALL the time since they are so easy and yummy.

Use a skillet that can go in the oven. We have a Kirkland brand enameled cast iron skillet. It only cost about $50 which is a steal when compared to other brands!

Preheat the oven by turning the broiler on so it is ready to go.


Chop/cut up everything that will be going in your fritatta and melt your oil of choice in the skillet (butter or expeller pressed coconut oil is best). With our cast iron we use medium/low heat (# 3 out of 10 numbers)


Saute the hardest ingredient first (such as potatoes or onions or peppers. If you are using potatoes you can lay them all flat and then flip them once before adding other things to make a nice crust.)

While this is cooking beat some eggs in a bowl (about 5 for a medium skillet about 8 for a large skillet)

Add a good amount of unsweetened coconut milk to the egg mixture (I am in love with the So Delicious brand of unsweetened coconut milk that comes in a carton and has no coconut flavor. It is really good for you and it is nice and thick like cream but is only 50 calories per 8 ounces and has all the health benefits of coconut milk. Trader Joe's now makes a similar product too that comes in a box by the boxed rice and soy milk.) You can also use cream, whole milk, or half and half if you are into using dairy.

Add some salt and pepper to the eggs or the veggies in the skillet as desired.

Add greens to the veggies in the skillet or any other softer ingredients you may be using. In the picture above I used pine nuts and then I added sun dried tomatoes and fresh basil and spinach.

When everything is sauteed to your liking gently pour the egg mixture over the ingredients in the skillet. Let it sit and cook for about 3 minutes. You will see it all start to set but it will still be runny on the top.

Then pop in in the oven under the broiler for about 2 to 3 minutes. If you preheated the oven by turning the broiler on at the start it will probably be good to go in 2 minutes. Check it so you don't burn your masterpiece!

Take it out and slice it like pie and eat!

Kids not into your gourmet veggie fritatta?  Here is my easy solution for that. I beat extra eggs. Then when the grown up fritatta comes out I quickly slice it and get it all on a plate. I put the skillet back on the flame and add some butter and let it melt. Then I pour in the rest of the egg mixture I saved and maybe sprinkle in some bacon crumbles (or whatever the kids do want in theirs, bacon always wins in our house). Then you do the same 3 minutes on the stove and 2 minutes under the broiler and viola, now the kids now have their own egg pie too!
